Wash & cut: Wash fresh amlas, boil them till soft, then separate the segments and remove seeds.
Soak: Soak the amla pieces in salted water for 1–2 hours to reduce bitterness; drain well.
Blanch: Boil the amla pieces again for 2–3 minutes and drain completely.
Mix with sugar: Add sugar (equal to amla quantity), a pinch of salt, and a little turmeric; mix well.
Cook: Cook on low flame till sugar melts and coats the amla pieces thickly.
Dry & store: Sun-dry or air-dry till dry, then store in an airtight container.
