Healthy Dal  Khichdi

Ingredients: ½ cup rice ½ cup moong dal (yellow or green split) 1 tbsp ghee 1 tsp cumin seeds (jeera) 1 pinch asafoetida (hing) – optional ½ tsp turmeric powder Salt to taste 1 small onion (optional) 1 carrot (chopped) ½ cup bottle gourd / lauki or any vegetable 3–4 cups water Few drops lemon juice (optional)

Wash rice and dal together and soak for 10 minutes. Heat ghee in a pressure cooker. Add cumin seeds and hing.

Add chopped onion (if using) and sauté till soft.

Add vegetables, turmeric, and salt. Mix well.

Add soaked rice and dal. Stir for 1 minute.

Add water and pressure cook for 3–4 whistles.

Let pressure release naturally. Mix well.

Add lemon juice if you like. Serve hot.
