Prepare the Bottle gourd (Lauki)Peel the Bottle gourd, wash it well, and cut it into medium-sized cubes.
Heat the oilHeat 2 tablespoons of oil in a pan. Add cumin seeds and a pinch of asafoetida (hing).
Add capsicumAdd chopped capsicum (Shimla mirch) and sauté for 1–2 minutes until slightly soft.
Add spicesAdd turmeric powder and salt. Mix well.
Cook the Bottle gourdAdd the Bottle gourd pieces and mix with the spices. Cover and cook on low flame for 10–12 minutes. Stir occasionally. Add a little water if needed.
Final touchWhen the Bottle gourd becomes soft, add a little garam masala. Cook for 1 more minute and turn off the heat.
